Late Summer Fajita Veggie Stew
This stew combines some of the veggies available locally at the end of summer, and it is so delicious! It has the veggies you would find in fajitas, including the caramelized peppers and onions combined with Mexican spices for a delicious combination! If you want to make this a little more substantial you can add in a 15 oz can of drained pinto beans as well. This is delicious served on its own or with cooked rice!

Autumn’s tip – always pair a carb with a buddy!
Two is always better than one – whether it’s working on a project, coming up with new ideas, OR balancing your blood sugar
And that’s because eating carbs alone spike your blood sugar the most
But when you pair a carb with a buddy (like protein or fat) – your blood sugars won’t spike as high because protein/fat act as a buffer (which stabilizes your blood sugar)
Plus, if you’ve ever eaten a carb alone (like a banana for example) and felt hungry an hour later, it’s probably because carbs alone don’t really fill you up
But when you add something like almonds or peanut butter to have with that banana, you stay full longer
So remember – pair that carb with a buddy!
